Evening Schedule:

6:15 PM – Welcome & Introduction
6:30 PM – Dinner Begins
Each of the five courses will be expertly paired with a unique wine selection, curated to highlight the depth and character of each vintage.
Course 1 – The 66 • served w/ Flounder, spring pea puree, hearts of fire, lemon, pork belly
Course 2 – Carbon • served w/ Smoked Lamb Rack, Poblano polenta cake, Ancho lamb jus, micro cilantro salad
Course 3 – The 24 • served w/ American Wagyu, Roasted Maitake, Black garlic demiglace, shaved truffle
Course 4 – Pinot Noir • served w/ Wild boar loin, Cherry Agrodolce, Fennel Fronds
Course 5 – Sparkling Rosé • served w/ Passionfruit Tart: Dark Chocolate shell, Passionfruit curd, strawberry
